They look to be Bachmann, not very old, the loco is an SD40-2. The red loco is an early Mantua/Tyco F7 from the Red Box era, 1960s. The grey covered hopper looks like a reissue of an old Varney mold, possibly a Life-Like.
That's just Ebay...me? I start everything at 99 cents and let the market set the price. I've never been burned yet but then again, I've been at this for 35+ years and have a good idea of what most items are worth.
Since your stuff is in really nice condition, some really good clear photos will bring out their best on ebay. And I agree with getz... the auction format is a pretty good way to get the current prevailing market price for your goods.
