There are 2 sets of screws at each end, and the ones you want are the ones partially hidden under the wheels. Once these are out, grasp the car ends in both hands and twist in opposite directions to make the roof pop off.

And here is a link that shows the exploded parts view of the car...

You can do a product search on MTH and probably find instructions for the exact car or set. Usually Railking passenger cars require you to remove a few screws from the bottom and twist the car till the roof comes off. I don’t remember if the dome car works the same way. Here is an example of instructions I came up with in a few minutes.

If those are extruded aluminum bodies like my Williams passenger cars, the ends come off with a few screws and the body slides off lengthwise.

Looks like a Railking car. There are two screws, one at each end. There will be a smaller screw there as well, that just holds down the floor.

Once you take out the two screws, pick up the locomotive on each end and twist! Yep, you have to twist, and the roof will pop off. Be sure to hold it over a table or near the rug, because sometimes the roof comes off pretty fast! :D
