1) DCC gives much better slow speed performance than DC. Of course the locomotive makes a difference too, but with my DCC system programed for 128 speed steps, a loco will crawl very slowly.

2) Well, whether you want a desert, a mountain, a town, or a swamp, is up to you.
If you mean what type of material to use for your basic landforms then I recommend extruded foam insulation board. This is the pink, blue, or green type sold at Home Depot or Lowes. You can glue stacked layers to make hills, and carve out trenches for rivers and road unnderpasses.
