I purchased some SPST's off ebay a couple years ago and would like to know how I might wire two together to create DPDT's for automatic switch operation. I would just buy new ones, but the cash is'nt there.

Not possible. Sell the ones you have, the SPDT's, and buy the others, The DPDT's.

A friend of mine uses contactors instead of switches for his layout. Push a button and the switch throws. I'm not sure how they work but that is what he uses.
